Rare Yellow Dragon Fruit is widely considered the sweetest and most flavorful of all cactus fruits. Closely related to Hylocereus, it produces large, fragrant flowers that bloom at night and close by morning. While the flowers are self-fertile, hand pollination can improve fruit production. Blooming occurs from summer through fall, followed by a long ripening season from September to May. The fruit is ready to harvest once the skin turns a bright, vibrant yellow. Before picking, gently brush off the small spines on the skin. Inside, the fruit has sweet white flesh dotted with tiny, edible black seeds. It can be enjoyed fresh, added to salads, blended into juices or smoothies, or made into jam. In warmer southern climates, Yellow Dragon Fruit is commonly grown in the ground on trellises. In cooler northern areas, it grows well in a large 7–10 gallon container with a sturdy stake or trellis for support. This plant thrives in warm, humid conditions and is also known as pitaya.
